Gross Fact
Escamoles are the larvae of the giant black Liometopum ants. The escamol are harvested from the agave plant where the ants make their home. Considered a delicacy in Mexico cuisine, some call it insect caviar. The escamoles taste buttery and slightly nutty. The larvae have the consistency of cottage cheese.
