Enjoyed in the northern United States especially Alaska, jellied moose nose is popular. First the nose is removed then boiled, so the hairs can be easily plucked. Spices are then added and the meat is boiled again until it becomes a gelatinous mass. Pour into a loaf pan and serve cold. It is Alaskan culture to eat every part of the animal.
